I propose a vegetarian burger topped with tomatoes, slices of zucchini coated with sesame oil, olives and a homemade chickpea and feta pea patty. As a sauce, I made a mixture of cottage cheese, mustard seed (optional), parsley and lemon juice.
This recipe is a complete change from what we are used to eating! Be generous with the sauce so that the hamburger is not choking.
For 2 hamburgers :
Chick pea patties
- 125 g canned chickpeas
- 15 g feta cheese
- 1 tablespoon of olive oil
- 1 egg
- 1 teaspoon of sesame seeds
- Salt, pepper
The hamburgers
- 2 homemade hamburger buns
- 2 tomatoes
- 1/2 zucchini
- From the rocket
- Sesame oil
- 3 tablespoons of cottage cheese
- 1 tbsp lemon juice
- 1 teaspoon of mustard seeds (optional)
- 6 black olives
- A little parsley
Chickpea pancakes
1- Pour the chickpeas, stripped of their skin, into the bowl of a blender.
2- Add the egg, oil, feta cheese, sesame seeds, a little salt and pepper.
3- Blend until a homogeneous texture is obtained.
4- Prepare a baking sheet with baking paper. Make 2 steaks the size of buns using a tablespoon. The consistency of the dough does not allow to shape them by hand. You have to shape them with the spoon.
5- Preheat your oven to 180°C and bake for 15 minutes.
6- When the pancakes are cooked, let them cool down to room temperature. Meanwhile, prepare the filling.
The hamburgers
1- Wash the zucchini and cut 6 – 8 slices with a peeler. Place them on a plate and sprinkle them with sesame oil and a little salt.
2- Cut the tomatoes into slices.
3- Mix the cottage cheese, crushed mustard seeds, chopped parsley and lemon juice.
4- Cut the buns in half, pour some sauce.
5- Add arugula, tomato slices, zucchini slices and again tomato slices.
6- Add the chick pea patties on top.
7- Cover with sauce and sliced olives.
8- Close the hamburger. You can eat it immediately or reheat it a little in the oven.
